When the summer heat kicks in, standing over a hot oven is the last thing most people want to do. Fortunately, there are plenty of satisfying and flavorful meals that don’t involve baking, broiling or roasting. From store-bought shortcuts to creative no-cook combinations, these dinner ideas that don’t require cooking are ideal for busy weeknights, heatwaves, or anyone who just wants to keep the kitchen cool.
Here are 10 ideas to make dinner easier — and cooler — this summer.
1. Rotisserie chicken tacos
A grocery store rotisserie chicken is one of the easiest dinner shortcuts out there. Simply shred the meat and stuff it into warm tortillas. Mission Street Taco Flour Tortillas work well here because of their small, soft size that holds together even with generous fillings. For toppings, toss together some shredded cabbage, sliced avocado and restaurant-style salsa, which has a fresh, homemade taste without the prep work. A squeeze of lime finishes it off for a fast, flavorful taco night that doesn’t require any cooking at all.
2. Caprese with upgrades
A traditional Caprese salad of tomatoes, mozzarella and basil can easily turn into dinner with a few additions. Start with BelGioioso Fresh Mozzarella, which has a creamy texture that pairs perfectly with sweet summer tomatoes. For a heartier version, toss in some S&W Cannellini Beans for extra protein and fiber, or add a few slices of Boar’s Head Prosciutto for a salty, savory element. Finish with a drizzle of Filippo Berio Extra Virgin Olive Oil and Alessi Balsamic Glaze for a restaurant-quality dish with zero cooking involved.
Fresh mozzarella, tomatoes and basil are summer staples. Add white beans or a few slices of Boar’s Head prosciutto to make it more filling. Drizzle with olive oil and bottled balsamic glaze that you can pick up at any supermarket. (Once you try the glaze, you’ll be putting it on everything from roasted veggies to grilled meats to fruit and ice cream.)
3. Pasta with no-cook sauce
Technically, boiling pasta uses the stovetop, but it’s brief—and worth it. Use Barilla Rotini or De Cecco Penne for best results, as their texture holds up well in chilled dishes. While the pasta cooks, make the sauce by halving cherry tomatoes, chopping fresh basil and stirring in minced garlic. Once the pasta is drained and slightly cooled, toss it with the tomato mixture and add a generous scoop of Galbani Ricotta Cheese or a torn ball of BelGioioso Burrata. Let it sit for 10 minutes to absorb the flavors, and serve warm or chilled.
4. Salad kits with extras
Bagged salad kits make for an incredibly easy dinner base. The Taylor Farms Southwest Chopped Salad Kit already includes cabbage, romaine, carrots, pepitas and creamy cilantro dressing. To turn it into a full meal, stir in a can of Bush’s Black Beans for extra protein and fiber. Add diced avocado or grilled chicken strips if desired. For a Mediterranean variation, try the Taylor Farms Caesar Salad Kit with rotisserie chicken and some halved cherry tomatoes.
5. Summer rolls
Summer rolls require no cooking if you use pre-cooked shrimp or tofu. Start by soaking rice paper wrappers in warm water. Fill them with shredded carrots, cucumber, cooked shrimp or tofu, and plenty of fresh herbs like mint and cilantro. For dipping sauce, House of Tsang Bangkok Peanut Sauce adds rich, sweet-savory flavor that takes minutes to serve. These rolls stay cool, light, and refreshing, even on the hottest days.
6. Chickpea salad with lemon and herbs
Some of the easiest dinner ideas that don’t require cooking are meatless protein-packed salads that come together in minutes. Start with a can of Goya Chickpeas, drain and rinse well. Mix with chopped cucumber, cherry tomatoes, red onion and parsley. Dress with lemon juice and a splash of Filippo Berio Extra Virgin Olive Oil. For a creamy, tangy boost, crumble in some feta cheese.
7. Charcuterie-style dinner
Sometimes a plate of snacks becomes dinner, especially when it’s carefully curated in a ready-made or build-your-own charcuterie board. If you’re creating your own, Columbus Italian Dry Salame pairs beautifully with BelGioioso Parmesan Cheese Wedges, while Simple Mills Almond Flour Crackers keep things gluten-free but still satisfying. Add some Divina Castelvetrano Olives and a spoonful of Dalmatia Fig Spread for a sweet-savory balance.
8. Tuna–stuffed avocados
Canned tuna makes a fast, protein-rich meal when paired with creamy avocado — one of my favorite dinner ideas that doesn’t require cooking. Use Wild Planet Albacore Tuna for its firm texture and sustainable sourcing. Mix it with a little mayonnaise, Dijon mustard, chopped celery, and a squeeze of lemon. Halve a ripe avocado, remove the pit, and spoon the tuna mixture directly into each half. Serve with a side of Late July Multigrain Tortilla Chips or some crusty bread.
9. Cold soba noodle bowls
Soba noodles cook quickly and are excellent served cold. Hakubaku Organic Soba Noodles offer a firm texture that doesn’t get soggy. After cooking and chilling the noodles, toss them with shredded carrots, cucumber, scallions and a few tablespoons of Annie Chun’s Sesame Ginger Dressing (a little pricey, but worth it.) Top with edamame, tofu, or shredded rotisserie chicken for protein.
10. Pita pocket sandwiches
Pita pockets make a versatile base for all kinds of no-cook fillings. Use Papa Pita Greek Pita Flatbread, which stays soft and pliable even when stuffed. Spread with Sabra Classic Hummus, then fill with chopped cucumbers, cherry tomatoes, pre-cooked falafel or grilled chicken, and a drizzle of tzatziki sauce. It’s fast, fresh and requires no heat at all.
